Taking place in and around the castle grounds between 10am and 5pm, the prized Lincolnshire sausage will be centre stage, with up to 30,000 expected to be sold according to organisers.
To keep up with changing demand stallholders are now also providing vegan and other health-conscious options.
“We’ve got one stall for vegans, there’s another that does gluten-free food, so we’re really accommodating,” said festival organiser Mark Brewer.
“Last year was the first year we managed to get the Kind Kebab to come and do vegan sausages and by the end of it they were blown away, they’d never had a day like it,” he said.

This year’s event also marks the first time popular mascot Mr Sausage will be joined by his wife Mrs Sausage.
Adult entry is just £1, and children get in free.
